Vegan Apple Crumble

Warm, cozy, high-fiber, and naturally sweetened — this crumble is the definition of comfort food that still loves you back. Sweet apples, cinnamon, and a crunchy oat-nut topping add up to fall wellness in a bowl. Makes 8 servings.

Ingredients

Apple Filling

  • 5 apples, chopped (Fuji + Granny Smith work well)
  • 2 Tbsp monk fruit sweetener (or maple syrup)
  • 1 Tbsp vanilla extract
  • 1 Tbsp cinnamon
  • Juice of 1 lemon
  • ⅛ tsp salt

Crumble Topping

  • ½ cup rolled oats
  • ½ cup oat flour
  • ½ cup chopped nuts (pecans + walnuts)
  • ½ cup monk fruit sweetener
  • 1 Tbsp cinnamon
  • ¼ cup melted coconut oil
  • Pinch of salt

Directions

  1. Mix all apple filling ingredients together and spread into a baking dish.
  2. In a separate bowl, mix the crumble topping ingredients until crumbly.
  3. Sprinkle the topping evenly over the apples.
  4. Bake at 350°F for 50–60 minutes, until bubbly and golden.
  5. Let cool slightly before serving.
