Soy-Free Lentil Tofu
A soy-free tofu alternative that’s high-protein, budget-friendly, and shockingly easy — just lentils, water, and seasoning. No soy, no gums, no weird fillers, just clean, whole-food protein. Ingredients
- 1 cup split red lentils
- 3 cups water, divided
- Seasoning of choice:
- Savory: garlic powder, onion powder, cayenne, salt and pepper
- Or keep it plain or lightly sweet for dessert applications
Directions
- Rinse the lentils well.
- Soak the lentils in 1½ cups water overnight (do not drain).
- Add the soaked lentils and soaking water to a blender.
- Add the remaining 1½ cups water and seasonings of choice.
- Blend until completely smooth.
- Pour the mixture into a saucepan over medium heat.
- Whisk continuously for about 5 minutes, until thick, glossy, and glue-like.
- Pour into a lightly oiled or lined dish or cake pan.
- Refrigerate 2+ hours to fully set.
- Slice, cube, or crumble and enjoy.
