High-Protein Egg White Veggie Frittata

A healthy, high-protein, no-fat frittata loaded with veggies — use whatever you have in the fridge. Makes 4 servings.

  • 19g protein and negligible fat per serving
  • A great way to use up any vegetables on hand
  • Naturally low-fat, no oil needed

Ingredients

  • 1 sweet potato, grated
  • 1 zucchini, grated
  • 1 yellow squash, grated
  • 1 red onion, chopped
  • 1–2 cups broccoli, chopped thin
  • ½ bag Trader Joe’s Ready Veggies, chopped
  • Veggie broth, for sautéing
  • 2 cups egg whites
  • Fat-free feta (Trader Joe’s), for topping

Directions

  1. In a very large, oven-safe pan, sauté the sweet potato, zucchini, squash, onion, broccoli, and Ready Veggies with broth. With this much veggies, they’ll mostly steam — stir periodically and be patient. Takes about 20 minutes.
  2. Once the veggies are cooked through, pour the egg whites into the pan.
  3. Top with fat-free feta.
  4. Bake at 350°F for 25–30 minutes. Let cool slightly before serving.

Serving Tip

Top with tomatoes and basil after cooking. Serve with black beans, avocado, vinegary slaw, or sour cream.
