High-Fiber Lemon Zesty Protein Balls

Bright, creamy, no-bake protein bites that taste like lemon cheesecake meets an energy ball — packed with fiber, protein, and slow-burning carbs to keep you energized and satisfied. Perfect for pre- or post-workout fuel, or whenever you want something sweet that actually nourishes your body. Makes approximately 14 balls.

Ingredients

  • 2 cups oats
  • 2 Tbsp monk fruit or other sweetener
  • ¼ tsp salt
  • 1 scoop whey isolate
  • 1 scoop lemon-flavored protein powder (or use 2 scoops whey plus 1 Tbsp lemon flavoring; any vegan protein powder also works)
  • 1 can cannellini beans
  • 1 Tbsp lemon zest
  • Juice of 1 lemon
  • ⅓ cup soaked cashews
  • 2 Tbsp unsweetened coconut flakes

Directions

  1. Add soaked cashews to a food processor and process until creamy. Add the can of beans, lemon juice, and lemon zest.
  2. In a separate bowl, mix together oats, monk fruit, salt, and protein powder, then add to the food processor with the bean mixture.
  3. Blend until a sticky dough forms.
  4. Roll into bite-sized balls, then roll in pulverized coconut.
  5. Chill for 30 minutes to firm up.

Serving Tip

Other topping ideas: chopped nuts, cocoa powder, or melted chocolate.
