High-Fiber Lemon Zesty Protein Balls

Ingredients
- 2 cups oats
- 2 Tbsp monk fruit or other sweetener
- ¼ tsp salt
- 1 scoop whey isolate
- 1 scoop lemon-flavored protein powder (or use 2 scoops whey plus 1 Tbsp lemon flavoring; any vegan protein powder also works)
- 1 can cannellini beans
- 1 Tbsp lemon zest
- Juice of 1 lemon
- ⅓ cup soaked cashews
- 2 Tbsp unsweetened coconut flakes
Directions
- Add soaked cashews to a food processor and process until creamy. Add the can of beans, lemon juice, and lemon zest.
- In a separate bowl, mix together oats, monk fruit, salt, and protein powder, then add to the food processor with the bean mixture.
- Blend until a sticky dough forms.
- Roll into bite-sized balls, then roll in pulverized coconut.
- Chill for 30 minutes to firm up.
Serving Tip
Other topping ideas: chopped nuts, cocoa powder, or melted chocolate.
