High-Fiber, High-Protein Chocolate Chip Bean Bars

Super moist, high-fiber, high-protein, gluten-free chocolate chip bars with no added sugar — made with a secret ingredient: beans. Makes 8 bars.

  • Comes together in one food processor, no mixer needed

Ingredients

  • 1 (15-ounce) can great northern beans, rinsed and simmered in water for 5 minutes, drained well
  • 2 ripe bananas
  • ⅓ cup monk fruit sweetener (or maple syrup or cane sugar)
  • 3 tablespoons cashew butter (or your favorite nut or seed butter)
  • 1 teaspoon vanilla extract
  • Pinch of coarse sea salt
  • 1⅓ cups oat flour
  • 1 teaspoon baking soda
  • ⅓ cup dark chocolate chips

Directions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. Bring the beans to a gentle boil for about 5 minutes. Drain well and let cool slightly.
  3. Add the beans, bananas, monk fruit, cashew butter, vanilla, and salt to a food processor. Blend until completely smooth.
  4. In a large bowl, whisk together the oat flour and baking soda.
  5. Fold the bean mixture into the dry ingredients until just combined.
  6. Stir in the chocolate chips.
  7. Spread evenly into the prepared pan.
  8. Bake for 22–25 minutes, or until the center is set and a toothpick comes out mostly clean.
  9. Cool completely before slicing into 8 bars.

Serving Tip

  • Protein Boost: Add 2 scoops of your favorite unflavored or vanilla plant protein to the batter (you may need 2–4 tablespoons of extra milk). Raises each bar to roughly 8–10g protein.
  • Higher Fiber: Stir in 2 tablespoons ground flaxseed or chia for an extra fiber boost.
  • Serving Ideas: Top with vegan yogurt or ice cream, add fresh fruit, or freeze individually for grab-and-go breakfasts.
