Ingredients
- 1 (15-ounce) can great northern beans, rinsed and simmered in water for 5 minutes, drained well
- 2 ripe bananas
- ⅓ cup monk fruit sweetener (or maple syrup or cane sugar)
- 3 tablespoons cashew butter (or your favorite nut or seed butter)
- 1 teaspoon vanilla extract
- Pinch of coarse sea salt
- 1⅓ cups oat flour
- 1 teaspoon baking soda
- ⅓ cup dark chocolate chips
Directions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- Bring the beans to a gentle boil for about 5 minutes. Drain well and let cool slightly.
- Add the beans, bananas, monk fruit, cashew butter, vanilla, and salt to a food processor. Blend until completely smooth.
- In a large bowl, whisk together the oat flour and baking soda.
- Fold the bean mixture into the dry ingredients until just combined.
- Stir in the chocolate chips.
- Spread evenly into the prepared pan.
- Bake for 22–25 minutes, or until the center is set and a toothpick comes out mostly clean.
- Cool completely before slicing into 8 bars.
Serving Tip
- Protein Boost: Add 2 scoops of your favorite unflavored or vanilla plant protein to the batter (you may need 2–4 tablespoons of extra milk). Raises each bar to roughly 8–10g protein.
