Ingredients
- Medjool dates
- ¼ cup raw pecans
- 1 tsp monk fruit sweetener
- 1 tsp vanilla extract
- Dark chocolate, melted
- Flaky sea salt
Instructions
- Prepare the dates
Remove the pits from the dates and slice each date in half lengthwise. Gently flatten
each half between parchment paper and roll out. - Make the pecan paste
In a food processor, blend:- ¼ cup pecans
- 1 tsp monk fruit sweetener (or any sweetener, to taste)
- 1 tsp vanilla
Blend until a smooth paste forms. Add a few drops of water if needed to help it blend.
- Fill the dates
Spread about ¼ to ½ teaspoon of pecan paste onto each date half. - Add chocolate
Drizzle about ¼ to ½ teaspoon melted dark chocolate on top. - Finish
Sprinkle lightly with flaky sea salt and allow the chocolate to set. Keep in the freezer
for an easy snack.
Optional Variations
Use other nuts like cashews or walnuts, or swap in peanut butter.
