Ingredients
- 3 bags (6 oz each) organic baby spinach
- 1 pear, sliced bite-size
- 1 bag (3 oz) sun-dried tomatoes, finely sliced
- 1 can (14 oz) artichoke hearts, chopped
- Red onion, thinly sliced
- ⅓ cup chopped pecans
- ½ cup feta (regular fat-free feta or vegan)
Olive Oil-Tomato Dressing
- ½ cup olive oil
- 3 garlic cloves, minced
- 6 Tbsp balsamic vinegar
- 1 Tbsp tomato paste
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- ~⅓ cup water, to thin (optional)
Directions
- Combine the spinach, pear, sun-dried tomatoes, artichoke hearts, red onion, pecans, and feta in a large bowl.
- For the dressing, blend or shake together the olive oil, garlic, balsamic vinegar, tomato paste, Italian seasoning, salt, and pepper. Add water to thin, if desired.
- Toss the salad with the dressing, taste, and adjust seasoning as needed.
