Loaded Spinach Salad with Olive Oil-Tomato Dressing

Fresh, satisfying, and nutrient-dense without being heavy. This salad is packed with fiber, antioxidants, and healthy fats to support heart health, digestion, and steady energy. Makes 8 servings.

Ingredients

  • 3 bags (6 oz each) organic baby spinach
  • 1 pear, sliced bite-size
  • 1 bag (3 oz) sun-dried tomatoes, finely sliced
  • 1 can (14 oz) artichoke hearts, chopped
  • Red onion, thinly sliced
  • ⅓ cup chopped pecans
  • ½ cup feta (regular fat-free feta or vegan)

Olive Oil-Tomato Dressing

  • ½ cup olive oil
  • 3 garlic cloves, minced
  • 6 Tbsp balsamic vinegar
  • 1 Tbsp tomato paste
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • ~⅓ cup water, to thin (optional)

Directions

  1. Combine the spinach, pear, sun-dried tomatoes, artichoke hearts, red onion, pecans, and feta in a large bowl.
  2. For the dressing, blend or shake together the olive oil, garlic, balsamic vinegar, tomato paste, Italian seasoning, salt, and pepper. Add water to thin, if desired.
  3. Toss the salad with the dressing, taste, and adjust seasoning as needed.
