High-Protein Healthy Egg White Veggie Bites

Simple, clean, and incredibly macro-friendly — great for breakfast, post-workout, or a quick protein boost anytime. Very low-fat, low-carb, high-protein, and blood-sugar friendly. Endlessly customizable. Makes 12 bites.

Ingredients

  • 16 oz liquid egg whites
  • ½ cup low-fat cottage cheese
  • ¼ cup fat-free feta
  • 2 tsp cornstarch (for structure and fluff)
  • ½ tsp salt
  • ¼ tsp black pepper
  • Shake or two of garlic powder

Veggies (approximate amounts)

  • ½ cup chopped mushrooms
  • ½ onion, finely chopped
  • ½ cup chopped peppers

Directions

  1. Sauté the mushrooms, onion, and peppers until soft. Let cool slightly.
  2. Add the egg whites, cottage cheese, feta, cornstarch, salt, pepper, and garlic powder to a blender. Blend until smooth.
  3. Lightly spray a silicone muffin pan.
  4. Pour the egg mixture into the cups and spoon the veggies evenly into each.
  5. Bake at 350°F for 25–35 minutes, until set.
  6. Cool slightly and enjoy.

Serving Tip

These freeze beautifully — place individually on a pan or plate to freeze, then transfer to a freezer bag once frozen. Reheat gently.
