High-Protein High-Fiber Granola

Most granola is just sugar and oil — this one fuels you. No added sugar, low fat, and packed with protein and fiber to keep you full and your energy stable. Makes 8 servings.

  • ~11.5g protein and ~5.5g fiber per serving
  • No added sugar, low fat and heart-friendly
  • Crisps up as it cools — no oil needed

Ingredients

  • 3 cups oats (sprouted oats used here)
  • 1 scoop whey protein (cinnamon roll flavor used here)
  • 1 scoop collagen peptides
  • 2 Tbsp flax meal
  • ½ cup puffed quinoa
  • 2–3 Tbsp monk fruit (or sugar or maple syrup)
  • 1 Tbsp cinnamon
  • ½ tsp salt
  • ⅓ cup egg whites
  • 1 Tbsp vanilla extract

Directions

  1. Preheat oven to 300°F.
  2. In a large bowl, stir together the dry ingredients: oats, whey protein, collagen, flax meal, puffed quinoa, monk fruit, cinnamon, and salt.
  3. Add the egg whites and vanilla, stirring until the dry ingredients are completely coated.
  4. Spread evenly on a lined baking sheet.
  5. Bake for 40–55 minutes, depending on your oven, until golden. Cool completely before serving — it will crisp up as it cools.

Serving Tip

Add-ins: walnuts, pecans, sunflower seeds, pumpkin seeds, coconut, or chocolate chips.
