High-Protein Chocolate Chip Protein Balls

Beans in your dessert? Trust me. Most protein balls rely on nut butter, oil, and lots of sweetener — these get their soft, fudgy texture from an unexpected ingredient: cannellini beans. The result is more protein, more fiber, fewer calories, and a snack that actually keeps you satisfied. Makes approximately 22 balls.

Ingredients

  • 3 cups rolled oats
  • 1 can cannellini beans, drained and rinsed
  • 3 scoops vanilla whey isolate
  • 1 scoop collagen peptides
  • 2 tablespoons cocoa powder
  • 4 tablespoons mini chocolate chips
  • ¼ cup sweetener of choice (monk fruit used here)

Optional Toppings

  • Unsweetened shredded coconut
  • Cocoa powder
  • Melted dark chocolate drizzle

Directions

  1. Add oats, cannellini beans, whey isolate, collagen, cocoa powder, and chocolate chips to a food processor.
  2. Process until the mixture becomes thick, sticky, and uniform.
  3. Roll into approximately 22 bite-sized balls.
  4. Leave plain, or coat with shredded coconut, dust with cocoa powder, or drizzle with melted dark chocolate.
  5. Refrigerate for at least 30 minutes before serving.

Serving Tip

Store in an airtight container in the refrigerator for up to one week, or freeze for longer.
